  • Eggnog: You can go the extra mile with homemade eggnog, or save time with your favorite store-bought brand. I tested it with homemade and TJ Lee eggnog and we enjoyed both!
  • Evaporated Milk: This is the best kind of milk to use when making flan because it’s thick and rich, but won’t curdle.
  • Eggs: They should be room temperature. That way, they blend more easily with the other ingredients and cook evenly.
  • Rum: Rum extract is also just fine if you want an alcohol free version.

How To Make Eggnog Flan

Melt the sugar slowly for the caramel. The caramel sauce can take 10 to 15 minutes to melt and turn to a rich, deep caramel color. Stir constantly with a heat-safe spatula and don’t walk away as it can burn quickly at the end.

If you burn your caramel sauce, start over! You will be able to see and smell if you burnt it. Even lightly burned caramel sauce will make for a bitter flan.

Work fast when pouring the caramel. As soon as the caramel reaches a deep amber color, pour it into your baking pan and tilt the pan immediately to coat the bottom before it hardens. It may crack as it cools – this is normal and totally fine!

Let the caramel cool completely before adding custard. If you pour the custard over hot caramel, it can cause bubbling or separation.

Always use a water bath. Place your flan pan in a larger baking dish and pour hot water halfway up the sides. This gentle cooking method prevents the custard from curdling or cracking.

Cover the flan while it bakes. Loosely cover the pan with foil to prevent the top from browning too much and to keep the custard from drying out.

Check for doneness by jiggle, not a toothpick. When you shake the flan, the center should slightly jiggle, but the edges should be set. It will continue to set while cooling and chilling.

Chill for at least 4 hours, but overnight is best. The longer the flan is refrigerating in the pan, the more the sauce will melt and make the caramel sauce.

Be careful when flipping. Make sure to use a larger plate that’s wider than your baking dish to catch all the caramel sauce… It’s liquid gold and you don’t want to lose a drop!

Variations to Try

  • Mini Eggnog Flans: Pour the custard into small ramekins for individual servings, perfect for parties.
  • Coquito Flan: Swap the eggnog for Puerto Rican coquito for a coconut twist!
  • Coffee Eggnog Flan: Add a tablespoon of instant espresso powder to the custard for a subtle coffee flavor.
  • Chai Eggnog Flan: Add chai spices like cardamom, cinnamon, cloves, and a pinch of black tea for a warm and spicy twist.

Storing Eggnog Flan

This is the ultimate Christmas make-ahead recipe since it has to chill overnight anyways! You can store this flan in an airtight container in the fridge for up to 5 days. I don’t recommend freezing it.

Ingredients

  • ¾ cup granulated sugar
  • 1 ½ cups eggnog
  • 1 (14 oz) can sweetened condensed milk
  • 1 (12 oz) can evaporated milk
  • 5 large eggs room temperature
  • 2 tablespoons rum or 1 teaspoon rum extract
  • ¼ teaspoon nutmeg double it for more spice flavor
  • cranberries, rosemary, star anise optional for decorating

Instructions

  • Preheat oven to 350°F.
  • Melt the sugar in a pan, stirring with a plastic spatula until the sugar melts and turns a deep amber color. Pour immediately into a 9-inch round pan (with at least 2-inch high sides) and tilt until the bottom of the pan and some of the sides have been coated. Let it cool completely before adding the custard.
  • Add the eggnog, sweetened condensed milk, evaporated milk, eggs, rum and nutmeg to a blender. Blend for 10 to 15 seconds. You can also pour the ingredients into a bowl and whisk them together, but a blender usually creates a smoother flan.
  • Pour into the cooled pan. Cover the pan tightly with foil and place in a larger pan. Pour water halfway up the sides of the flan pan.
  • Carefully transfer to the oven, being sure to not splash any of the water into the flan. Bake for 85 minutes. Remove from the oven and take out of the water bath. The flan should be slightly jiggly in the center, but set on the sides. The center will firm up as it cools.
  • Cool for an hour, then refrigerate for at least 4 hours, but overnight is best if you can wait. The longer the flan sits, the more the caramel will melt to make more of the delicious sauce.
  • When ready to serve, slide a knife around the outside edge of the pan to release the flan. Then place a plate that is wider than the flan pan upside down over the flan and quickly invert. Remove the pan, decorate if desired, then slice and serve!

Notes

Store: Flan can be stored in the fridge for up to 5 days, just be sure to keep it tightly covered with foil or in an airtight container. I do not recommend freezing flan as the texture will change once thawed.

  • Cinnamon: Don’t skip it! Even though the rolls are already spiced, the extra cinnamon makes a big difference.

How To Make Cinnamon Roll Casserole

Use melted butter to prevent sticking. You can use non-stick spray instead, but I prefer melted butter as it adds flavor.

Cut the cinnamon rolls into 1-inch small pieces. You can do this with a sharp knife or kitchen shears. The goal is to have them all roughly the same size so they fit well on a fork and also bake evenly.

Pour the custard evenly over the rolls. To avoid dry spots, pour slowly and evenly across the entire pan so every cinnamon roll piece gets coated.

Bake until golden and set. Check the center for doneness, it shouldn’t jiggle when gently shaken. If the top browns before the center is set, cover loosely with foil and continue baking.

Don’t forget to save the icing. Set the icing packets aside before baking. Then drizzle them over the warm casserole right after it comes out of the oven for the perfect finish.

Variations To Try

This Cinnamon Roll Casserole recipe is easy to customize! Add a handful of chopped nuts like pecans or walnuts for a nice crunch, or toss in some raisins or dried cranberries for a more classic holiday vibe.

You can also mix in a can of apple pie filling or cherry pie filling for a fruity twist. If you’re craving something sweeter, adding a handful of chocolate chips is always a hit with the kids.

How To Prep It Ahead of Time

The night before, cut up the cinnamon rolls and arrange them in the prepared baking dish. That way, the next morning, all you need to do is whisk together the egg mixture, pour, and bake.

Or, if you like it more custard-y, you can assemble the casserole completely the night before. Cover it tightly and refrigerate it overnight. When ready to bake, remove the casserole dish from the fridge and remove the covering. Let it sit on the counter for 20 minutes before baking to prevent the glass casserole dish from cracking in the oven. Then bake as directed.

Storing Leftovers

While best served fresh when it’s warm and gooey, the leftovers are still tasty! I like to pop a serving in the microwave and reheat it to enjoy as a sweet late night bite.

Once completely cooled, cover the casserole tightly with plastic wrap or place in an airtight container. Stored in the refrigerator, it should stay good for up to 3 to 4 days. To reheat, warm individual slices in the microwave for 20 to 30 seconds.

This sweet-and-spicy Roasted Acorn Squash is topped with crunchy pumpkin seeds, crispy sage, fresh citrus, and pomegranate. With perfectly caramelized edges, it’s a must-try side dish for Fall!

This sweet and spicy roasted acorn squash is anything but basic! I’ve made a lot of roasted squash recipes over the years, but this sweet and spicy version is hands-down my favorite.

That buttery glaze with cinnamon, smoked paprika, chili powder, and just the right amount of brown sugar, hits all the right notes. Especially once paired with fresh orange zest, crispy sage, and pumpkin and/or pomegranate seeds on top.

Slice, roast, season, and toss it into the oven – this squash is secretly easy to make in less than an hour. It’s the kind of side dish that gets more compliments than the main course!

  • Acorn Squash: Look for squash with deep green skin and no soft spots; the ridges can make slicing tricky, so take your time and use a sharp knife.
  • Brown Sugar: You can use light or dark depending on how rich you want the flavor. You can also swap it for maple syrup, but I personally prefer the caramel-like flavor from brown sugar.
  • Orange: Freshly squeezed orange juice and orange zest add a great citrus pop to brighten up the dish. It really brings all the flavors together and I highly recommend not skipping it! When you grate the orange zest, be sure to only grate the bright orange skin – and not the bitter white pith below it.
  • Spices: The sweet and spicy flavor comes from a cozy mix of cinnamon, ginger, smoked paprika, and a touch of heat from the chili powder. If you want even more heat, feel free to add a pinch of cayenne!

Optional Toppings

The toppings truly take this squash to the next level! Toasted pumpkin seeds add crunch and a nutty flavor that balances the soft squash. However you can also use the fresh seeds from the acorn squash – just season and roast them for a zero-waste option. 

The pomegranate arils bring juicy pops of tartness that contrast the sweetness and spice. And if you have fresh sage, a quick toast brings out a rich, earthy flavor that’s the perfect finishing touch. The combo of the two makes the dish look stunning with a bright pop of red and green.

Each topping adds its own layer of texture and flavor, but you can mix and match based on what you have. You can also add crumbled goat cheese (or feta cheese) for a creamy addition.

How To Bake Acorn Squash

If you’ve never had roasted acorn squash with a sweet and spicy twist, get ready to be hooked. Below are a few tips, scroll down to the printable recipe card for full instructions!

No need to peel. The skin of acorn squash becomes soft and totally edible once roasted, so you don’t have to peel it. If you’re not a fan of the texture, you can always peel it after roasting.

Use a sharp and sturdy knife. Acorn squash has tough skin and deep ridges. A good cutting board with a towel underneath can help keep the squash stable as you cut it.

If your squash is really hard to cut, pop it in the microwave for 2 to 3 minutes. It softens just enough to make slicing safer and easier.

Scoop out all the seeds and stringy bits: A sturdy spoon or an ice cream scoop works great for cleaning out the inside. Save the seeds if you plan to roast them!

You want the squash soft but not mushy. If your squash slices are thicker than ½ inch, add a few extra minutes to the roasting time and check for tenderness with a fork.

Add garnishes for layers of flavor and texture! It’s not just about looks, the pomegranate arils, seasoned pumpkin seeds (or acorn squash seeds!), orange zest, and crispy sage make it shine.

If you’re serving this for a holiday or dinner party, you can even prep everything ahead of time.

Prep the squash ahead of time, make your sauce, and store everything separately in the fridge. Then all you have to do is assemble and roast when you’re ready.

If you choose to pre-roast the squash, warm the squash in the oven just before serving. Be sure to only add the toppings when you are ready to serve, so they stay crisp and fresh.

  • 2 large acorn squash
  • 6 tablespoons butter melted
  • 4 to 6 tablespoons brown sugar  divided
  • 1 orange you will use both the juice and zest
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder 
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • Pomegranate arils optional garnish

Seasoned Roasted Pumpkin Seeds (Optional Garnish)

  • 4 tablespoons pumpkin seeds  or the leftover seeds from acorn squash!
  • 1 teaspoon olive oil 
  • ½ teaspoon salt 
  • ½ teaspoon pepper
  • ½ teaspoon smoked paprika
  • Pinch of cayenne pepper

Crispy Sage Leaves (Optional Garnish)

  • 1 teaspoon olive oil
  • fresh sage leaves

Instructions

  • Preheat the oven to 400°F and line a baking sheet with parchment paper (or foil and spray with non-stick cooking spray).
  • Cut each of the squash in half and scoop out the seeds. Then cut the squash into half inch slices. Lay the slices on the prepared baking sheet. 
  • In a small bowl, whisk to combine the melted butter, 2 tablespoons brown sugar, orange juice, cinnamon, smoked paprika, chili powder, ginger, and salt. Drizzle the mixture over the squash slices, then sprinkle the remaining brown sugar on top.
  • Place in the oven and bake for 25 to 30 minutes, until fork tender.
  • Place the squash on a serving plate and sprinkle the fresh orange zest over the top. Garnish with pumpkin seeds, pomegranate arils, toasted sage leaves, as desired.

Seasoned Roasted Pumpkin Seeds

  • Place the pumpkin seeds in a small bowl. Add the olive oil, salt, pepper, smoked paprika and cayenne, tossing to coat. Spread on a baking sheet and bake for about 15 minutes (at 400°F) until slightly toasted. You can roast these at the same time as the squash in the oven!

Crispy Sage

  • Heat the oil in a skillet over medium heat. Once hot, add the sage leaves in a single layer. You want to just toast them slightly, about 30 seconds. Watch carefully as they burn quickly! Once crisped, transfer them to a paper towel lined plate to drain.

Notes

Store leftovers: Once cooled, transfer to an airtight container and store in the refrigerator for up to 5 days.
Reheat: Reheat in the microwave until warmed through. Keep in mind – you don’t want to heat the Pomegranate seeds!

  • Unsalted Butter: It needs to be softened. If using salted butter, reduce the added salt in the recipe slightly. Don’t forget to let it adjust to room temperature for an hour prior to using.
  • All-Purpose Flour: The best way to measure flour is to spoon it into the measuring cup! If you dunk the cup straight into the bag, you end up really packing it in there (which results in too much flour).
  • Cocoa Powder: Dark cocoa powder will create a richer chocolate cookie base, but regular cocoa powder will work just fine. You can also use Dutch process cocoa powder. 
  • Graham Crackers: I like to keep the graham crackers roughly chopped so you get a nice crunchy texture in each cookie. It also adds to the aesthetic look of the cookies.
  • Hershey Bars: You’ll need 2 full-size bars. Of course, you can feel free to swap these with any other chocolate bars you prefer, we just like to use Hershey’s for that classic flavor.
  • Marshmallows: You want to use regular size marshmallows, not jumbo ones. You can also use 3 to 4 mini marshmallows per cookie, but these tend to spread more in the oven.

Tips For Making Chocolate S’mores Cookies

These smores cookies are all about that nostalgic campfire flavor, and a few small tips go a long way to making them truly special. Please scroll down to the printable recipe card for full instructions!

Don’t over mix the dough. Stop mixing as soon as everything comes together to keep the cookies soft and tender.

Use a mixture of small crumbs and chunkier bits of graham crackers. This will add both flavor and a great crunch to your cookies!

Don’t fully enclose the marshmallow in the dough. You want to mostly wrap the dough, but let a little marshmallow peek through. This gives you that gooey, toasted effect on top that’s totally irresistible. You can see a few of my cookies on the right side don’t show any marshmallow, those are the ones I wrapped the dough fully around the marshmallow.

These cookies spread when baked! The marshmallows will cause your cookies to spread a fair amount, so make sure you space your cookies at least 2 inches apart! I fit 6 cookies on a 9×13 inch baking sheet.

Press a few extra pieces of chocolate and graham cracker on top of each cookie for a bakery style finish. You can do this before or immediately after baking. I personally prefer to do this after they have baked so I can see exactly where the cookies need a little extra pizazz. Don’t worry, the cookies are warm enough to melt the chocolate and make them look like they baked that way!

Make Ahead or Freezing Cookie Dough

I always make a double batch of this cookie dough. That way, I can enjoy some now and also save some for the future me who craves cookies at 9pm! 😉

Make Dough Up To 3 Days In Advance: Prepare the dough, wrap it tightly in plastic wrap, and chill it for up to 3 days before forming and baking the cookies as directed.

Freeze Cookie Dough: Shape the dough around the marshmallows (with the top peeking out), then freeze the unbaked dough balls on a sheet pan for 30 minutes. Transfer to a freezer safe bag to store for up to 3 months.

Bake Frozen Dough: When you’re ready to bake, place the frozen dough balls on prepared baking sheets. Bake as directed, but add about 2 extra minutes to the bake time.

Ingredients

  • ½ cup salted butter softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 ½ cups all purpose flour
  • ½ cup cocoa powder use dark cocoa powder for richer cookies
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 cup roughly chopped graham crackers
  • 1 cup chopped Hershey bars about 2 full size candy bars
  • 12 large marshmallows

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or silicone baking mats.
  • Add your softened butter and both sugars to a large mixing bowl. Use an electric hand mixer to cream the ingredients together on medium-high speed until smooth. Whisk in the egg and vanilla until the egg is fully incorporated with the creamed sugar.
  • Reduce the speed of your hand mixer and gently whisk in the cocoa powder, baking powder, baking soda, and flour. Fold in the chopped graham crackers and Hershey bars.
  • Using a medium cookie scoop (about 2 tablespoons of dough), scoop and drop balls of cookie dough onto a baking sheet. Flatten each ball with your hands and place a marshmallow in the center of each cookie. Mostly wrap the dough around the marshmallow, leaving just a little of the top of the marshmallow peeking through. This will ensure the marshmallow is visible once baked. 
  • Bake your cookies for 10 to 12 minutes, until the edges are set (the centers will still be gooey). Let cookies cool on the pan for a few minutes to set up, before transferring them to a wire cooling rack to cool completely.

Notes

Store Cookies: Place the cooled cookies in an airtight container at room temperature for up to 4 days. Store them with a slice of bread, replacing every couple of days as it becomes stale, to keep the cookies soft and chewy for longer. For that freshly baked taste, microwave a cookie for up t0 10 seconds!
Freeze Dough: Scoop and shape the dough balls (with the marshmallow partially showing), then freeze them on a tray. Once frozen solid, store in a freezer-safe bag and bake from frozen, adding 1 to 2 minutes to the total bake time.

This cookie recipe was gifted to us by a family friend, Maria. It was her mom’s recipe for chocolate chip cookies, with walnuts and two kinds of chocolate chips added. She uses a retro baking trick of dissolving baking soda in warm water before adding it to the cookie dough. This technique helps to ensure the baking soda is evenly distributed throughout the batter and allows it to activate more quickly. This is particularly beneficial in cookie recipes where the baking time is short!

  • Chocolate Chips: I use an even amount of both semi-sweet chocolate chips and white chocolate chips. They balance each other out perfectly, but feel free to use milk, dark, or whatever combo sounds best to you. You can also cut up chocolate bars into chunks for larger bites of chocolate!
  • Walnuts: I like to use salted, roasted walnuts as they add the perfect amount of saltiness to the cookies to make the flavors pop. If you have regular walnuts, lightly toasting them before adding them to the batter will enhance their flavor.
  • All Purpose Flour: Fluff the flour and then spoon it into the measuring cup, leveling it off with the back of a butter knife. If you dunk the cup into a packed bag of flour, you end up using too much flour, creating overly dense cookies.
  • Butter: It needs to be room temperature, so be sure to leave it out on the counter for an hour or so prior to using.
  • Sugars: You’ll need both white granulated sugar and brown sugar for this cookie recipe.
  • Hot Water: It needs to be hot to help the baking soda dissolve.
  • Baking Soda: Double check the label and make sure it’s not expired.

How to Make Chocolate Chip Walnut Cookies

While they made be from scratch, these cookies are so easy to toss together! I like to press a few extra chocolate chips onto the top of each dough ball before baking so the final product looks picture perfect.

Keep in mind, the cookies may seem a little too soft when they first exit the oven, but they’ll continue to firm up as they cool. You don’t want to over bake them until the centers are firm, otherwise the cookies will be rock hard once cooled. Jessica's Tip

I like to sprinkle a little flaky sea salt on top of the cookies right after they come out of the oven. This perfectly enhances the sweet and salty contrast! You can add the salt before baking too, but I find the salt tends to stay concentrated in the center this way. Sprinkling it on after the cookies have spread in the oven results in each bite having just the right amount of salt.

  • Remove baked cookies from oven and let cookies rest on the baking sheet for a few minutes to firm up, then serve warm or transfer to a cooling rack to cool completely.

Magical Spinach Feta Puff Pastry Bites ✨

I don’t think I’ve ever seen an appetizer disappear quite as quickly as these spinach puffs…  Ok, well, maybe my grape jelly meatballs give them a run for their money. 😉

They’re oh-so-cheesy and creamy with just the right amount of garlic to keep you going back for more (and more). I often serve these for parties and recently served them as part of a brunch spread. They disappeared so quickly – I immediately regretted not making a double batch!

Your shopping list should be nice and short for this easy appetizer recipe. Scroll down to the recipe card below for the full ingredient list and exact amounts!

  • Spinach: Prepare the frozen chopped spinach according to the package instructions and be sure to squeeze out all the excess moisture. (Check the tips section below for how I easily do this!)
  • Puff Pastry: This will need to be thawed before you use it. You can thaw it overnight in the fridge if you remember in advance. Or if you’re like me and forget, just set it on the counter at room temperature for about 20 to 30 minutes. Crescent roll dough can be used instead, but I much prefer the texture you get from puff pastry.
  • Cream Cheese: It needs to be fully softened prior to mixing, set it on the counter 1 hour before starting.
  • Garlic: I like using fresh garlic whenever I can! Garlic powder or garlic paste will both also work in a pinch, but the flavor will be dulled.
  • Feta: This might just be my favorite ingredient, it adds the perfect amount of saltiness! You can even add a little extra if you like it super cheesy. If you swap this cheese for something like goat cheese, make sure to add a hearty pinch of salt!

How to Make Spinach Puffs

I recommend using a hand mixer to easily and quickly combine the filling, but if your cream cheese is soft enough you can also do it by hand. Below is a quick recipe overview, but please scroll down to the recipe card for full instructions.

  • Make the filling: Mix together the cream cheese with one egg and garlic until smooth. Fold in the spinach and feta.
  • Slice the Puff Pastry: Roll both of the puff pastry sheets into squares. Slice each sheet into 9 squares. I like to use a pizza cutter to easily cut the puff pastry, but any sharp knife will work too!
  • Assemble: Place the puff pastry squares into greased muffin tins. Add the creamy spinach filling to each one and fold the edges to the center.
  • Brush: Brush some egg wash over the tops of each one. This helps the puff pastry to turn that beautiful golden brown.
  • Bake: Bake until golden, then let rest for a few minutes to cool and for the filling to set up. Then serve and watch how quickly they disappear!

Chef’s Tips & Variations

  • Squeeze the Spinach: It is *VERY* important to strain the excess water out of the spinach so your filling is not runny – no one likes soggy spinach puffs! I recommend using cheese cloth or thin tea towel (wrapped tightly and squeeze!) or a fine mesh sieve and a spoon to press the moisture out.
  • Add Bacon or Sausage: Toss some cooked and crumbled bacon or ground sausage in the filling. I often add crumbled breakfast sausage when I am serving them for brunch!
  • Parmesan: Craving even more cheese? Sprinkle in some (preferably freshly grated) parmesan or mozzarella cheese.
  • Bite Size: The recipe below uses a standard muffin size, but you can use a mini muffin tin instead if you prefer! They will bake quicker though, so start checking in around 12-15 minutes.
  • Empanadas: This feta spinach filling also makes amazing spinach empanadas! Just wrap it up in my homemade empanada dough recipe and bake or fry them!

How To Prepare In Advance

Assemble and Refrigerate: (Bake within 24 hours)

  1. Prepare: Assemble, but do not brush with egg wash. Cover the whole muffin tin with plastic wrap and refrigerate for up to 24 hours.
  2. Bake: When ready to serve remove from the fridge and let puffs sit at room temperature for 10 to 15 minutes. Then brush with egg wash and bake as directed.

Freeze Unbaked Spinach Puffs (Bake within 3 months)

  1. Prepare: Assemble, but do not brush with egg wash. I highly recommend lining your muffin tins with parchment paper or foil cupcake liners to easily remove them once frozen.
  2. Flash Freeze: Freeze the unbaked spinach puffs in the muffin tins for 1 to 2 hours until firm.
  3. Store Properly: Transfer the frozen puffs to a freezer-safe bag, separating layers with parchment paper. Freeze for up to 3 months.
  4. Bake: No need to thaw! Brush them with the egg wash and place them in a preheated 400°F oven, adding 2 to 3 extra minutes to the total bake time.

Ingredients

  • 4 oz cream cheese softened
  • 2 large eggs divided
  • 3 cloves garlic minced
  • 10 oz frozen chopped spinach thawed with extra liquid removed
  • 4 oz feta cheese
  • 1 (17.3 oz) package frozen puff pastry thawed

Instructions

  • Preheat your oven to 400℉. Spray a muffin tin with cooking spray and set aside.
  • In a large bowl, beat to combine the cream cheese, 1 egg, and garlic with a hand mixer until smooth. Stir in the thawed spinach and feta cheese until well combined, then set aside.
  • Slightly roll out your puff pastry into a square, it should be 10 or 11 inches wide and tall, and then cut each sheet into 9 squares, or as close to squares as you can cut them.
  • Place the squares into your muffin tin, then add about 2 tablespoons of filling to each. Fold the edges of the puff pastry towards the center.
  • Whisk the remaining egg with 1 tablespoon of water or milk. Brush the egg wash over the top of the puff pastry.
  • Bake for about 22 to 25 minutes, or until the puff pastry is golden brown. Let rest for 5 minutes, then serve and enjoy!

Notes

  • Store: While best served fresh, you can store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat: For best results, I recommend air frying them at 325°F for 2 to 3 minutes. You can also warm them in the oven at 350°F for about 6 to 8 minutes

My Favorite Chocolate Silk Pie

Growing up, my aunt would make a French Silk Pie every Christmas and my cousins and I would literally fight over the last slice. She shared her pie recipe with me many years ago and after lots of trials and testing, I can confidently say, this French Silk Pie recipe is truly the best I’ve ever had!

While my aunt used a regular homemade pie crust, I prefer an Oreo crust for double the chocolate. I also add a pinch of instant espresso powder to boost the intensity of the chocolate flavor. I promise you will be hooked after just one bite!

If you bake as much as I do, you might already have everything you need in your kitchen. Scroll down to the recipe card below for the full ingredient list and exact amounts!

  • Semi-Sweet Chocolate: Avoid using chocolate chips as they contain emulsifiers that can make for a less smooth filling. I like the depth of flavor from bittersweet chocolate or baking chocolate, but you can use a 50/50 mixture of bitter sweet and milk for a sweeter pie. A good quality baking chocolate makes a difference, my favorite luxury brands are Valrhona, Callebaut, and Ghirardelli.
  • Espresso Powder: The added espresso powder does wonders for enhancing the chocolate flavor in the pie. Unlike baked goods, you will be able to taste the slightest hint of coffee – so if this is not appealing to you, feel free to leave it out.
  • Eggs: They need to be room temperature. And remember, we’re cooking them to 160°F, so you don’t have to worry about consuming them raw.
  • Heavy Cream: This is essential for both the filling and the topping. Don’t swap it with any other dairy product or the texture will be off.
  • Cream of Tartar: I use a small amount of cream of tartar in my whipped cream. That, plus the addition of powdered sugar helps to stabilize the whipped cream so it will stay fluffy for longer without weeping.

How to Make French Silk Pie

While this pie may be made from scratch, don’t worry – it’s still so easy! The crust is baked for a few minutes, but the filling itself is completely no-bake, making this a great make-ahead dessert recipe. Below is a quick recipe overview, but please scroll down to the recipe card for full instructions.

  • Prepare the Oreo Crust: Pulse the Oreos in a food processor until you have crumbs, then add the butter and pulse until it looks like wet sand. Press crust into your pie plate, bake, and then set it aside to cool completely while you make the filling.
  • Whip the Cream: Whip the heavy cream until stiff peaks form. Cover the bowl with plastic wrap and refrigerate.
  • Cook the Eggs: Fill a pan with some water and bring to a simmer. Place a glass bowl over the pan and whisk the eggs, sugar, and salt in the bowl. Make sure the glass bowl isn’t touching the water! Whisk continuously until the mixture reaches 160°F. Let it cool for about 5 minutes.
  • Add the Chocolate: Whisk the melted chocolate, vanilla, and espresso powder into the egg mixture. Let it cool for about 10 more minutes. It’s very important that you allow the egg mixture and the chocolate to cool off as stated in the recipe otherwise the filling can seize.
  • Beat the Butter: This is great to do while the chocolate mixture is cooling off! Beat the butter until smooth and creamy. I like to use a hand mixer, or stand mixer, to do this easily.
  • Combine the Filling: Slowly mix the egg and chocolate mixture into the creamy butter. Once combined, increase the speed and beat until fluffy. Fold in the whipped cream from earlier.
  • Chill: Pour the filling into the cooled Oreo crust. Cover with plastic wrap and refrigerate pie until the filling is firm.
  • Garnish: When you’re ready to serve, top the pie with whipped cream. Garnish with chocolate curls or shaved chocolate on top, if desired.

How To Make Chocolate Curls

Melt 1/2 cup semi-sweet chocolate in the microwave in 20-second intervals. Spread a thin layer of melted chocolate on a metal or marble surface. Work quickly, as the action of spreading it on a cold surface will cool the chocolate quickly and it may start to seize. If it starts to seize up, scrape it all off remelt it and try again. I typically use an upturned metal baking pan and a palette knife or a bench scraper to spread the chocolate.

Refrigerate the pan with the chocolate on it for 5 minutes, then let it sit at room temperature for about 3 more minutes. Then use a bench scraper, held at an angle, and scrape the chocolate in a swift and fluid motion to create the curls. The temperature of the chocolate is important – too cold and it will break before it curls, too soft and your curls will be limp. I recommend doing one test area before attempting to scrape the entire surface.

Prepare French Silk Pie in Advance

Once it is topped with the whipped cream, French silk pie is best served that same day, as the whipped cream will start to soften and weep quickly. However, you can prepare it up to two days in advance as long as you do not top it with the whipped cream!

  • Make Ahead: Prepare the pie, filled with only the chocolate filling (with no whipped cream on top). Store the pie fully covered (I wrap mine tightly with plastic wrap) in the fridge up to 48 hours in advance.
  • Ready To Serve: Beat the whipped cream fresh and spread it on top of the pie, within 2 hours of serving, for the best texture!
Leftover Filling

Depending on the depth of your pie plate, you may have some filling leftover. Feel free to eat this with a spoon, or if you have good self control, you can pour into a small dessert cup, cover and refrigerate for a treat later!

Ingredients

For the crust

  • 25 Oreo cookies do not remove the cream filling
  • 4 tablespoons salted butter melted

For the filling

  • 1 ½ cups heavy whipping cream
  • 4 large eggs room temperature
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 8 oz semi-sweet baking chocolate chopped fine
  • 2 teaspoons vanilla extract
  • 1 teaspoon espresso powder optional
  • 12 tablespoons salted butter cubed, room temperature

For the topping

  • 1 ½ cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cream of tartar
  • chocolate curls or shavings optional topping

Instructions

For the crust

  • Preheat oven to 350ºF.
  • Add the Oreo cookies to the bowl of a food processor and pulse to create fine crumbs. Add in the melted butter and pulse until all of the butter is absorbed by the crumbs and they are the consistency of wet sand.
  • Press into the bottom and up the sides of a 9-inch deep pie plate.  Bake for 10 to 12 minutes, remove from oven and then set aside to cool completely.

For the filling

  • In a medium bowl, using a hand mixer, whip the heavy cream until stiff peaks are formed, about 3 to 4 minutes. Cover the bowl with plastic wrap and store in the fridge for later.
  • Fill a medium saucepan with 3-inches of water and bring to a simmer. In a glass or heat-proof bowl that is big enough to sit on top of the saucepan, whisk together your eggs, sugar and salt until pale yellow.
  • Place the bowl over the pot of simmering water, making sure the bottom of the bowl does not ever touch the simmering water beneath. Cook, whisking vigorously until the mixture reaches 160ºF, about 10 to 12 minutes. Once the egg mixture reaches 160ºF, remove from the heat and let cool for 5 minutes. Make sure to not stop whisking, as this can cause the eggs to start to solidify. If you do not have a thermometer look for the following visual clues: the mixture will get foamy and thicken, coating the back of a spoon.
  • In a small heat proof bowl, melt the chocolate in the microwave, heating in 20-second intervals, and stirring until all the chocolate is melted and smooth. Do not overheat, as the chocolate can become grainy and seize up, you want it just melted and pourable.
  • Whisk the melted chocolate, vanilla, and espresso powder into the egg mixture until fully combined. Set aside for 10 more minutes to cool.
  • While the egg and chocolate mixture cools, beat the butter in the bowl of a stand mixer with a paddle attachment set to medium speed for 2 to 3 minutes, until it becomes smooth and creamy, stopping to scrape the bottom of the bowl once or twice.
  • With the mixer on low, slowly add in the egg and chocolate mixture, making sure to scrape the sides and bottom of the bowl once or twice while combining. Once well combined, turn the mixer to medium high speed and whip the mixture until light and fluffy, about 4 to 5 minutes.
  • Gently fold in the chilled whipped cream from the fridge in 2 batches. Pour the filling into the cooled crust, wrap tightly with plastic wrap, and refrigerate until firm, at least 6 hours (or up to 48 hours in advance).

For the topping

  • Just before serving, make the whipped cream topping. Place the heavy cream in a medium size bowl and whip until thickened using the whip attachment of an electric mixer.
  • Add in the powdered sugar, vanilla, and cream of tartar. Continue whipping until medium-stiff peaks are formed.
  • Spoon or pipe the whipped cream onto the top of the pie and garnish with the chocolate curls or shavings, if desired. For the cleanest slices, use a sharp knife dipped in hot water and dried before making each cut. Enjoy!

Notes

Storage: French silk pie is best served the same day that it is topped with whipped cream, as the whipped cream will start to soften and weep quickly. However, leftovers can be stored wrapped in plastic wrap and kept in the fridge for up to 2 days.

These Cheddar Biscuits are the ultimate comfort food — quick to make, incredibly cheesy, and packed with savory and buttery goodness. Made super easy with just a bowl and a spoon like my favorite beer bread recipe, my kids and I love baking these biscuits together. The hardest part? Waiting for them to bake as the mouthwatering smell fills the kitchen!

Ready in 30 minutes and made with simple ingredients, these biscuits are far better than any store-bought version. Whether you’re serving them alongside braised short ribs, dunking them in soup, or just enjoying one as a snack, they’re sure to become a household favorite. Fair warning, they disappear fast, so consider making a double batch!

  • Flour: It’s best to fluff and then spoon the flour into the measuring cup. If you dunk the cup right into the bag, you end up packing it, which results in too much flour creating overly dense biscuits.
  • Cheese: I like to use sharp cheddar cheese, but you can opt for milk or extra sharp. You can also swap out cheddar for gouda, pepper jack, or even a mix of mozzarella and parmesan for a unique twist.
  • Sugar: While these are a savory biscuit, a little sugar will balance the flavors. If you don’t have sugar on hand, you can use honey instead!
  • Milk: Whole milk is typically my go-to because it’s has a higher fat content and will make your biscuits more moist and tender. Feel free to use any milk you like best, you could even make these with half and half!
  • Butter: You’ll need some for the biscuit dough AND for the topping to make these biscuits supremely buttery! I wrote the recipe to use unsalted butter, but if you only have salted butter, just cut back a little on the added salt.
  • Garlic: We prefer to use garlic powder in the biscuits and in the butter topping so as not to overpower the cheddar flavor in these biscuits. However, for all my garlic lovers, you can absolutely use finely minced fresh garlic instead!

Chef’s Tips & Variations

  • Use Freshly Grated Cheese: Pre-shredded cheese contains anti-caking agents that can affect the texture. Grate your own cheddar for the best melt and flavor.
  • Stuff with Cheese: Place a small cube of cheese inside each biscuit before baking for a melty surprise in the middle. Be warned it may ooze out a little, but while they may not be as pretty the taste is worth it!
  • Add Fresh Herbs: While I used dried parsley for ease, fresh parsley is great too! For more flavor options, try adding some diced fresh chives, thyme, or rosemary.
  • Make Mini Biscuits: Use a medium sized cookie scoop to scoop two tablespoons of dough to portion out smaller biscuits, perfect as an appetizer or snack!
  • Air Fryer: While I recommend using the oven as air fryers can vary and be unreliable for baked goods, you can air fry these cheddar biscuits. I recommend lining your air fryer with parchment paper and cooking the biscuits at 325°F for about 10 to 12 minutes.

  • Using a wooden spoon, stir in the wet ingredients until just combined. Fold in the shredded cheese. Don’t over-mix the dough or your biscuits can come out too dense!
  • Use a 1/4 cup measuring cup, measure out 8 balls of the batter and drop them, rounded, onto your prepared baking sheet. Leaving room for spreading, at least 2 inches apart.
  • Bake for about 12 to 14 minutes, until slightly golden.
  • While the biscuits are baking, stir together all of the topping ingredients.
  • Once the biscuits are done in the oven, generously spread the topping over top all of the biscuits. Allow to cool slightly just so you don't burn your mouth and then dig in!

Chewy Coconut Chocolate Chip Cookies with Almonds!

Almond Joy bars are my son Milo’s favorite candies. He’s been begging me to make a cookie version and after many tests, this is our favorite!

We originally tried chopping and adding in the actual candy bar, but they turned out quite messy. So instead, we loaded a soft and chewy cookie dough base with semi-sweet chocolate chips, shredded coconut, and crunchy almonds.

These Almond Joy Cookies bake up perfectly with each bite capturing the magic of the classic candy bar. Ready in 30 minutes, this recipe is simple to make with no chilling or complicated steps — just mix, scoop, and bake. Bonus: This cookie dough freezes great for fresh homemade cookies anytime!

If you’re an avid baker, there’s a big possibility that you already have everything you need to make these cookies in your kitchen right now. Scroll down to the recipe card below for the full ingredient list and exact amounts!

  • All-Purpose Flour: Spoon the flour into the measuring cup rather than dunking the cup straight into the bag. When you dunk a cup like that, you end up really packing the flour in there. Packed flour is too much flour — creating overly dense cookies!
  • Baking Soda: Double check the label and make sure it’s not expired.
  • Butter: It needs to be softened, so don’t forget to leave it on the counter for at least one hour prior to using. If you forgot, shred it quickly with a box cheese grater and it will soften in minutes!
  • Chocolate Chips: Semi-sweet are my favorite to use! They really help to create that Almond Joy flavor. Dark chocolate chips or a dark chocolate bar cut into chunks also work great.
  • Sweetened Shredded Coconut: You can use unsweetened coconut if you’d like. Just note that you’ll lose a little of the classic Almond Joy element.
  • Extracts: Vanilla extract and coconut extract help to deepen the flavor of the cookie dough base. You can skip the coconut extract, but I don’t recommend skipping the vanilla extract. If you love the taste of almonds, you can also add a 1/2 teaspoon of almond extract for an extra boost.

How To Make Almond Joy Cookies

This Almond Joy Cookie recipe is so easy – you don’t even need to chill the dough. Just beat to combine the dough, stir in all your mix-ins, scoop and bake! Below is a quick recipe overview, but please scroll down to the recipe card for full instructions.

  • Mix the Dry Ingredients: Whisk together the flour, baking soda, and salt.
  • Mix the Wet Ingredients: Cream the butter and sugars until light and fluffy. It’s best to use a hand mixer for this step unless you have a lot of elbow grease to spare! Mix in the vanilla, coconut, and egg.
  • Make the Cookie Dough: Add the dry mixture into the butter mixture until just combined. Fold in the chocolate chips, coconut, and almonds.
  • Scoop: Drop the cookie dough onto a prepared sheet and leave a little room for spreading. I recommend using a medium cookie scoop here, which is about 2 tablespoons of dough.
  • Bake: Place in preheated oven and bake for just 11 to 13 minutes, until cookies are golden brown and edges are set. The cookies will continue to firm up as they cool on the baking sheet, so let them rest a few minutes before moving.

Chef’s Tips & Variations

  • Dress Them Up: You can press a whole almond into the top of the cookies before or after baking. You can also drizzle them with melted chocolate and sprinkle on a few more sliced almonds and shredded coconut on top.
  • Cookie Sheet Tips: For the best results, bake one cookie sheet of cookies at a time and allow the cookie sheet to fully cool before dropping more cookie dough on it. Using hot/warm cookie sheets can cause cookies to spread too fast. I like to use multiple cookie sheets to prevent any issues.
  • Chill: If your cookies are spreading too much when baking, refrigerate the dough for 2 hours then try again. 
  • Toast the Almonds: Toasting the almonds before adding them to the dough brings out a deeper, nuttier flavor. If you really love almonds, feel free to add an extra 1/2 cup sliced almonds to your cookies.
  • Pinch of Sea Salt: A sprinkle of flaky sea salt on top right after baking will enhance the sweetness and makes the flavors pop.

Make Ahead and Freeze Cookie Dough

I always make a double batch and freeze scoops of cookie dough to bake them whenever a craving hits. With a freezer full of homemade cookie dough, you’re always ready for surprise guests!

  • Freeze Dough: Freeze unbaked dough balls on a sheet pan for 30 minutes. Transfer to an airtight, freezer safe container and freeze for up to 6 months.
  • Bake Frozen Dough: When ready to bake, place frozen dough balls on prepared baking sheets. Bake as directed, but add about 2 extra minutes to the bake time.

Ingredients

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter softened
  • cup granulated sugar
  • cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon coconut extract
  • 2 large eggs
  • 3 cups semi-sweet chocolate chips or dark chocolate chips
  • 2 cups sweetened shredded coconut
  • 1 cup sliced almonds

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper, or silicone baking mats, and set aside.
  • In a small bowl, whisk to combine the flour, baking soda, and salt. Set aside.
  • Using a hand mixer, cream together the butter and sugars until light and fluffy, about 2 minutes. Add the vanilla extract, coconut extract, and egg, and mix to combine.
  • Add the dry ingredients into the butter mixture in two additions, beating until dough is well combined. Fold in the chocolate chips, coconut and almonds.
  • Using a medium cookie scoop (2 tablespoons size), drop dough by rounded spoonfuls onto prepared baking sheets. Leaving a little room in between for spreading.
  • Bake for 11 to 13 minutes, until edges are set and golden brown. Allow cookies to cool for 5 minutes before moving to cooling racks to cool completely.

Storing: Cookies can be stored in an airtight container on the counter for up to a week. Store them with a slice of bread, replacing every couple of days as it becomes stale, to keep the cookies soft and chewy for longer.
Freeze Cookies: For extra protection, wrap each cookie in plastic wrap and place in a freezer-safe bag. Freeze for up to 3 months. Thaw overnight in the fridge, or at room temperature for 30 minutes.

  • Buttermilk: If you don’t have buttermilk, you can mix regular whole milk with a tablespoon of vinegar as a quick substitute. If you have left over buttermilk, use it to make my favorite buttermilk biscuits!
  • All-Purpose Flour: It’s best to spoon the flour into the measuring cup rather than dunking the whole cup in the bag. When you dunk the measuring cup, you end up really packing in the flour leading to an overly dense cake.
  • Baking Soda: Always double check the label and make sure it’s not expired!
  • Butter: Unsalted and softened. Be sure to let it sit on your counter for an hour or two prior to using so it’s not still cold and combines well with the other ingredients.

It’s so easy to make and universally loved, we make this buttermilk pound cake recipe for just about every family gathering! Below is a quick recipe overview, but please scroll to the recipe card at the bottom of this post for the full instructions and to watch the step-by-step video.

  • Prepare: Preheat the oven to 325°F and grease a 10 or 12 cup bundt pan.
  • Whisk the dry ingredients: Whisk together the flour, baking soda, and salt.
  • Make the wet mixture: Beat to combine the butter and sugar. Once light and fluffy, beat in the eggs. Then stir in the vanilla and almond extracts.
  • Make the batter: Beat the flour mixture into the wet mixture, slowly adding the buttermilk as you go. Watch closely and do not over mix the batter, beat it just until it combines.
  • Bake: Pour the batter into the prepared baking pan and smooth the top. Bake for 55 to 65 minutes, until a toothpick inserted comes out clean or with a few moist crumbs.
  • Cool: Let the pound cake completely cool in the pan before you flip it onto a cake plate.

  • Loaf Pans: This cake looks gorgeous in a Bundt pan, but you can also use bake it in two 9-inch loaf pans instead.

  • Powdered Sugar: A dusting of powdered sugar is all it needs to look elegant!
  • Cream and Fruit: Whipped cream and fresh fruit like strawberries, blackberries and blueberries is a great idea. You can also use canned fruit pie filling, like apple pie filling.
  • Ice Cream: It’s amazing served warm with a scoop of vanilla ice cream and a drizzle of salted caramel sauce or chocolate sauce. For the holidays, try my pecan praline sauce over the top!

  • Beat in flour mixture alternating with the buttermilk, just until the batter comes together. Do not over mix. Pour batter into prepared bundt pan.
  • Bake on the middle rack for 55 to 65 minutes, until the center is set and a toothpick inserted comes out clean or with a few moist crumbs stuck to it. If needed, lightly tent the cake with foil half way through baking if the top is darkening too quickly.
  • Allow the cake to cool completely (in the bundt pan) before inverting onto a cake plate. Slice the cooled cake and serve as desired!
