No matter what you call it, this pumpkin martini really has it all! Smooth pumpkin, a shot of bold espresso, warm fall spices, and a swirl of RumChata make for a creamy, frothy cocktail perfect for fall.

What I really love about this pumpkin martini is how incredibly smooth it sips. Even with two shots of booze, you barely notice as the creamy half and half and cozy pumpkin flavor mellow it all out.

Plus, the espresso adds just enough boldness to balance everything without overpowering the sweet, spiced fall flavors. It’s the perfect harmony!

  • Vodka: I used Absolut, but any middle-of-the-road vodka will work. You could even try a flavored vodka – vanilla, whipped cream, or pumpkin spice if you can find it.
  • RumChata: This adds the best creamy, warm spiced flavor. They do make a pumpkin spice version if you want to take it up a notch! You could also use Baileys or Kahlua.
  • Espresso: You can also use cold brew or strongly brewed black coffee, but espresso is best for a stronger coffee flavor.
  • Pumpkin Puree: Make sure you’re using pure pumpkin puree, NOT pumpkin pie filling. The can should list pumpkin as the only ingredient.
  • Half & Half: You can swap this with whole milk or heavy cream, but be warned! Milk won’t be as creamy and heavy cream will make it VERY thick. I find that half & half is the perfect balance.
  • Maple Syrup: This adds a little sweetness to help balance all of the bold flavors. Use more or less to taste. A good quality maple syrup is preferred for the best fall flavor, but you can use simple syrup.
  • Pumpkin Pie Spice: Swap this with cinnamon if needed.

Tips For Making This Pumpkin Espresso Martini

Just a few ingredients, a quick shake, and a chilled glass, this pumpkin espresso martini is ready in under five minutes! Below are a few tips, scroll down to the printable recipe card for full instructions!

If you like a strong drink, try making it with 2 oz vodka. When I first made this martini, I used 2 oz vodka and it overpowered everything else! The next time I used just 1 oz and while still strong, the flavors were perfectly balanced and smooth. Don’t forget there’s also a shot of RumChata added!

Make sure your espresso (or coffee) is completely cooled before adding it to the shaker. If it’s warm, it will melt the ice and water down the drink, leaving you with a weak, flat martini. Brew and chill it ahead of time for the best results.

Start with a tablespoon of maple syrup, but feel free to taste and tweak. Some espressos are more bitter than others, so you might need a touch more or less sweetness depending on your coffee and your preference.

Adding a garnish makes it feel even fancier. A little whipped cream, a sprinkle of pumpkin pie spice, or a few coffee beans on top adds an instant upgrade.

Can I Make This Pumpkin Martini Ahead?

Sadly once shaken, this martini is best served right away. Over time, the frothy texture will diminish and the ingredients can separate.

However, you can prep it ahead for a party, so you just have to shake it when ready to serve! Combine everything – EXCEPT the ice and espresso – in a sealed pitcher and refrigerate. When ready, pour portions into a shaker with ice and espresso (cooled) and shake to order.

Ingredients

  • ice cubes
  • 1 oz vodka
  • 1 oz RumChata

Instructions

  • Add ice (about 5 ice cubes) to a cocktail shaker. Then add the vodka, RumChata, espresso, pumpkin puree, half & half, maple syrup, vanilla, and pumpkin pie spice.
  • Close the lid of the cocktail shaker tightly and shake vigorously for about 20 to 30 seconds. Shake the cocktail hard to achieve a frothy top.
  • Strain into a chilled martini glass (or a coupe glass). Garnish with whipped cream and pumpkin pie spice. Enjoy!

  • Vodka: Honestly, in this transfusion drink recipe, you honestly can’t even really taste the vodka! Any plain middle-of-the-road vodka will definitely get the job done, but a better quality vodka will always be a little smoother.
  • Grape Juice: Concord grape juice is preferred for the classic flavor and pretty pink color! Avoid grape juice blends or juice cocktails, which can taste watered down or too sweet.
  • Ginger Ale: I’ve made this with both regular ginger ale and diet ginger ale. Personally, I couldn’t taste the difference, so use whichever you prefer. I personally really enjoy Verner’s Ginger Ale as it has lots of ginger flavor.
  • Lime Juice: Freshly squeezed is the way to go!

  • 3 dashes Angostura bitters or orange bitters for more orange flavor

Ingredients Needed

Only a few ingredients are needed for these refreshing coconut mojito with pineapple. You will also need a tall highball glass, I love these tall ribbed glasses. Scroll down to the recipe card for exact amounts.

  • Honey: For rimming the cocktail glass.
  • Toasted Coconut: Shredded coconut is tasty and festive for the rim. Toast your shredded coconut by cooking it in a dry skillet over medium-low heat until golden brown. Cool before using.
  • Mint: Fresh mint leaves are available in the produce section of most grocery stores year-round.
  • Ice
  • Limes: You will need both lime wedges and fresh lime juice.
  • Rum: Choose a good quality, white rum. Coconut rum would be delicious to add even more coconut flavor.
  • Coconut Pineapple Juice: Find a coconut and pineapple juice in the jarred juice section of most big grocery stores. (See tips section below for substitutions, if needed.)

How to Make Pineapple Mojitos with Coconut

This delightfully refreshing pineapple mojito recipe requires no cocktail shaker or special bartender knowledge to whip up. A little elbow grease for muddling is all you need! Scroll to the recipe card at bottom of the post for full detailed instructions.

  • Coconut Rim: Coat the top of a tall glass with honey and press it into toasted coconut.
  • Muddle: Add the mint leaves and a lime wedge into the garnished glass. Use the end of a wooden spoon, or a muddler, to press the mint and lime to release the oils.
  • Fill: Add ice till glass is about 3/4 full and then pour in the lime and rum. Top with pineapple and coconut juice and stir to combine.
  • Garnish: Add a fresh garnish of pineapple chunks, lime and mint leaves to make it extra festive. Serve immediately!

  • Make it Sweeter: Pineapple coconut juice is naturally sweet, but you could add a splash of simple syrup if preferred. Too sweet? Add club soda or coconut water for part of the pineapple coconut juice.
  • Non-Alcoholic: Eliminate the rum and top the juices with a little lemon-lime or pineapple soda.
  • Coconut Pineapple Juice: If you can’t find it locally, make your own by mixing 50% pineapple juice and 50% coconut water.
  • Creamy: While mojitos are not traditionally creamy, I have added a splash of coconut cream (from the top of a can of coconut milk) to add a creaminess.

Instructions

  • Place toasted coconut on a small plate. Rim the lip of a tall cocktail glass with honey and press into the toasted coconut.
  • Place mint leaves and 1 lime wedge into glass. Use a muddler (or bottom of a wooden spoon) to crush the mint and lime to release the mint oils and lime juice.
  • Fill the glass 3/4ths of the way full with ice. Pour the lime juice and rum over the ice. Top it off with pineapple coconut juice. Gently stir.
  • Garnish with extra lime, pineapple, and mint on a skewer if you’re feeling fancy! Serve immediately.

Why I Love This Creamy Mexican Rice Drink

Growing up in Texas, a glass of ice-cold horchata was the ultimate refreshment on a hot summer day! The creamy texture combined with the warm flavors of cinnamon and vanilla quickly became one of my favorite drinks. This horchata recipe was passed along to me from a family friends’ Abuela, and it’s by far my favorite version! Here’s why I think you will enjoy it too:

  • Rich and Creamy: The secret to this perfect horchata recipe? A can of sweetened condensed milk! It gives this horchata recipe a creamy, rich flavor that’s totally decadent.
  • Easy to Make: This recipe is simple and doesn’t require many ingredients, which makes it so simple and quick to pull together. 
  • Refreshing: Served chilled and over ice, this sweet rice milk is so refreshing on a hot day! Its cold, cinnamon-y flavor is impossible to resist.
  • Great for Parties: A hit at any gathering, from a Cinco de Mayo party to backyard barbecues, with both kids and adults. Prepare in advance and store in the fridge for a ready-to-drink treat!

Key Ingredients

Below you will find helpful notes for key ingredients used to make this easy horchata recipe. Scroll down to the recipe card for full ingredient list and exact amounts!

  • White Rice: This is the base for the horchata, giving it a starchy, creamy texture. Any plain long grain white rice is fine (long grain, jasmine, etc.). Just don’t use instant, quick rice or brown rice.
  • Cinnamon: I like to use Mexican cinnamon (canela). It breaks easily, helping the flavor get into the rice. However, whole cinnamon sticks will also work! I also like to sprinkle a little ground cinnamon on top when serving.
  • Evaporated Milk: This is a canned milk that enhances the creaminess and richness of the horchata. If you don’t have it, use whole milk instead. You will need to use 4 cups of milk to replace the evaporated milk, and be sure to reduce the amount of water to 5 cups.
  • Sweetened Condensed Milk: In my opinion, this is the key to a great homemade horchata. It adds a sweetness and almost caramel-like flavor, and makes it even thicker and creamier!
  • Heavy Cream: If you want to really up the ante, add a splash of heavy cream. This is totally optional, your horchata will still be delicious without.

How to Make Horchata

Making Mexican horchata is very easy and mostly hands-off. You will need time to refrigerate, however, so be sure to budget about eight hours for that. Below is a quick recipe overview, but please scroll to the recipe card at the bottom of this post for full instructions and to watch the step by step video!

  • Blend and Soak: Blend rice with hot water, then add your cinnamon sticks, and refrigerate this for at least 8 hours.
  • Blend Again: After soaking in the fridge, take out the rice mixture and blend it again until it is smooth.
  • Strain: Pour the mixture through a fine mesh strainer or some cheesecloth to strain out the rice. Discard the leftover rice.
  • Finish: Mix in the rest of the ingredients, and refrigerate the horchata until you’re ready to serve. Serve chilled, with ground cinnamon as a garnish.

Chef’s Tips & Variations

  • Chocolate Horchata: Change this up by adding a chocolate Abuelita tablet! Blend it well, and strain with the rice.
  • 4-Hour Horchata: Blending the rice for a bit and using hot water makes it possible to enjoy this horchata sooner than usual. You can check it at about 4 hours and see if it’s creamy enough for your liking. However, I really think it’s best when given the full 8 hours to soak.
  • Straining The Rice: I like to use a combination of a fine mesh strainer AND cheesecloth. This ensures a smooth texture by removing any gritty rice particles. Strain the mixture twice to ensure maximum smoothness.
  • Dairy-Free Option: Use almond milk or coconut milk instead of regular milk. Then add granulated sugar, honey, maple syrup, or a sugar-free alternative like stevia to sweeten it.

Horchata

This sweet and creamy Horchata is made with cream, cinnamon, and white rice! It’s super easy to make with just ten minutes of prep. The secret to this perfect horchata recipe? A can of sweetened condensed milk!

  • ½ cup heavy cream
  • cup granulated sugar
  • ½ teaspoon vanilla

Instructions

  • Heat 4 cups of water until hot, then add to a blender with the rice and blend until the rice is coarsely ground.
  • Add the cinnamon sticks and blend again. Refrigerate mixture for at least 8 hours. (I place the lid on the blender and store this mixture in the fridge in the blender.)
  • Add the mixture back into the blender and blend again until smooth.
  • Line a colander with cheesecloth, or a fine mesh sieve, and strain liquid into a large pitcher. Discard any leftover rice. Strain the mixture twice to ensure maximum smoothness.
  • Stir in the remaining water, evaporated milk, sweetened condensed milk, heavy cream, sugar and vanilla. Refrigerate until ready to serve.
  • Stir or shake well before serving. Serve over ice with a little extra ground cinnamon on top, if desired.

Storage: Store in an airtight container or jar for up to 5 days, or possibly even longer – it depends on the freshness of your dairy, the temperature of your refrigerator, and other factors. Be sure to toss it if it seems “off” at all – whether there’s an odd smell or a slimy texture. Shake or stir well before serving, as some separation may occur. Freezing is not recommended as it can alter the texture and flavor. 
Whole Milk: If you don’t want to use evaporated milk, you can use whole milk instead. You will need to use 4 cups of milk to replace the evaporated milk, and be sure to reduce the amount of water to 5 cups.

What Is Spiked Cider Made Of?

To make this simple cocktail, you will need some good apple cider (not hard cider) and a few cocktail basics. For full ingredient amounts and directions, scroll to the printable recipe card at the bottom of this post.

  • Apple Cider: I used some homemade cider that I picked up locally, but any good apple cider or unfiltered apple juice will work!
  • Ginger Beer: You can also use ginger ale, however ginger beer has a much stronger and spicier ginger taste.
  • Bourbon: Smoky bourbon is perfect to take this drink from mocktail to cocktail. If you don’t have bourbon, any whiskey is fine. You could also use brandy.
  • Ice: I like crushed ice here.
  • Optional Garnishes: Candied ginger and cubed apples make great garnishes, or use a sprig of fresh rosemary!

What Alcohol Is Good with Apple Cider?

Apple cider pairs well with lots of different liquors, including bourbon, whiskey, rum, brandy, and cinnamon or apple-flavored liqueurs. You can definitely experiment to find your favorite combination!

How to Make Spiked Apple Cider

Nothing fancy here – just mix and pour. The apple cider and bourbon should be mixed first. When you’re ready to serve, pour the cider-bourbon mixture over crushed ice, and then top it off with ginger beer for a fizzy finish. Garnishes go on top for a nice presentation, and you’re done!

  • Hot Toddy Apple Cider: Gently warm the apple cider on the stove, and then add the bourbon. A little bit of honey and lemon, with a cinnamon stick for stirring/garnish, makes this warm drink that much more festive.
  • Maple Bourbon Apple Cider: Add a drizzle of pure maple syrup and a sprig of rosemary to your spiked apple cider. This one is good hot or cold. 
  • Pear and Ginger Apple Cider: Substitute a bit of pear brandy for the bourbon, and garnish the cocktail with slices of fresh pear.
  • Cinnamon Sugar Rim: Another fun option is to rim your glass with cinnamon sugar. Place a mixture of granulated sugar or raw sugar and a pinch of cinnamon on a shallow plate. Use a lemon, orange or honey to wet the rim of your glass and press it into the cinnamon sugar.

Storing Spiked Apple Cider

Spiked apple cider can be safely stored in the refrigerator for up to 3 to 5 days. However, the ginger beer will definitely go flat long before that time, so I really recommend making and serving this drink fresh! Thankfully it only takes a couple of minutes to prepare!

Is Apple Cider Just Apple Juice and Cinnamon?

Apple cider and apple juice are similar, but they aren’t quite the same. So what’s the difference? You might think it’s cinnamon, but a lot of fresh apple ciders don’t actually contain spices.

Apple cider is basically made by pressing fresh apple ciders, including the pulp, skin, and core. This makes a super-flavorful juice that’s cloudy and rich. Apple juice is made similarly, but it’s filtered to remove all of the solids, giving you a clear juice.

How to Make Apple Cider Punch

Making this apple cider punch is so easy, and you can even do it ahead of time if you like! Here’s how:

  • Mix the liquids: In a large pitcher, combine the apple cider, lemonade, orange juice and maple syrup. Stir these until they’re well-combined.
  • Add the fruit: Add the apple slices, orange slices, rosemary sprigs, and cinnamon sticks. Cover the pitcher and refrigerate for at least 2 hours to infuse the flavors (or overnight).
  • Finish: Combine the infused cider mixture with the sparkling water (or sparkling wine!) and ice before serving. Enjoy!

Can I Freeze This?

You can freeze any leftover punch, but you’ll want to strain out the garnishes first. Also, keep in mind that the sparkling water or wine will not stay fizzy once frozen and thawed. Still, it will stay safe to drink for a long time, as long as six months or a year, if frozen. You can serve it again by thawing it out, or by making a slushie.

What Is Agua Fresca?

Agua fresca is a type of Latin American drink that can come in many different flavors. They’re usually a blend of fresh fruits, veggies, seeds, and herbs with sugar and water.

The most popular kinds are lime with chia seeds, mango with passionfruit, or milky rice water. In Mexico, it is usually sold in carts around parks and can be enjoyed with breakfast, lunch, or dinner. Make sure to also check out my recipe for cucumber agua fresca.

Recipe Ingredients

You only need a few ingredients, most of which you may already have on hand. For full ingredient amounts and directions, scroll to the printable recipe card at the bottom of this post.

  • Watermelon: I prefer to use the seedless watermelon variety when I can, but any fresh cubed watermelon will work great.
  • Granulated Sugar: You can use raw honey, agave syrup, light brown sugar, or dark brown sugar.
  • Lime Juice: Lemon juice works too.
  • Salt
  • Ice
  • Chamoy: This is totally optional, but highly recommended for the rim!

How to Make Watermelon Agua Fresca

Making watermelon agua fresca is no different to blending a juice or smoothie. It’s so easy to make with just 4 simple steps!

  • Blend: Add the watermelon, lime juice, and salt to the blender. Process until smooth.
  • Strain: Strain the mixture into a pitcher through a fine mesh sieve or cheese cloth.
  • Prepare the Rim: Optional: Dip the rims of the serving glasses into chamoy or tajin.
  • Serve: Fill the glasses with ice, pour in the agua fresca, and enjoy.

Serving Suggestions

Watermelon agua fresca is the perfect drink for all your Mexican-themed meals. Serve it with my Mango Salsa and Tortilla Chips for an extra fruity snack.   • Chill the Juices: Fill a pitcher with the cranberry juice, grape juice, and vodka. Refrigerate until ready to serve.
  • Add Cranberries. When ready to serve, add frozen cranberries to the pitcher.
  • Add Soda Water. Then you can either top each individual glass with soda water to taste, or you can stir the soda water into the pitcher and serve immediately. (If I think the punch will sit for a while, I add the soda water to the glasses as I serve them. That way, each glass is bubbly and fresh.)

What Makes Mexican Hot Chocolate Different?

Mexican hot chocolate is a little spicier and less sweet than traditional hot chocolate. Common spices include ground cinnamon, cloves, nutmeg, and cayenne pepper for some heat. The chocolatey richness doesn’t come from cocoa powder but from Mexican chocolate. Abuelita and Ibarra are the most popular brands.

Recipe Ingredients

  • Whole Milk: Low-fat milk works too, but will be much less creamy.
  • Abuelita Chocolate: This recipe uses one Abuelita chocolate tablet, Ibarra brand is a great swap.
  • Granulated Sugar: Feel free to use light brown sugar.
  • Ground Cinnamon
  • Salt
  • Cayenne Pepper
  • Vanilla Extract

How to Make Mexican Hot Chocolate

With only 3 steps, it’s as easy as making chocolate milk! Just simmer and serve.

  • Fill the pot. Heat the milk in a pot. Add the chocolate, sugar, cinnamon, salt, and cayenne once it begins to simmer.
  • Simmer it. Let the mixture simmer until the chocolate is fully melted. Don’t let it come to a boil.
  • Serve. Remove the pot from the heat. Stir in the vanilla. Serve and enjoy!

Tips & Variations

Although Abuelita chocolate is already spiced, that doesn’t mean you can’t make a couple of changes to the recipe to make the drink milder or more chocolatey.

  • Reduce the Spice: Decrease the amount of cinnamon and cayenne pepper by half for a less spiced drink.
  • Extra Chocolate-y: Add an extra 1/4 chocolate disk at a time until it’s chocolatey to taste.
  • Strain: If the milk develops a film while it’s on the stove, strain it through a fine mesh sieve right before serving to make sure it’s completely smooth.
  • Swap the Chocolate: Ibarra, Oso, and Don Gustavo are amazing brand swaps in this recipe. Wait until the chocolate has melted before adding the spices because each brand is spiced differently. You don’t want to accidentally overdo it!
  • Chill: Wait until the drink comes down to room temperature before popping it into the fridge. Refrigerate it until fully cooled and then enjoy it like chocolate milk.

Ingredients

  • 4 cups whole milk
